A quick and easy casserole recipe with garlic knots made from refrigerated biscuit dough, Italian sausage meatballs, marinara and mozzarella cheese that eats a lot like a deep-dish pizza!
Remember the Bubble Up Pizza craze a few years ago? That’s where you make a casserole out of refrigerated biscuit dough, pizza sauce, cheese (sometimes sausage) and pepperoni… remember that one?
Those recipes sparked a craze because they were delicious, easy and kids loved them!
As my kids have grown up a bit over the years, so has my Bubble Up Pizza.
Now I toss the dough with garlic and parmesan to make something akin to garlic knots for the base. Then I make super easy meatballs out of Italian sausage and layer everything with mozzarella and marinara.
And the kids still love it. And what’s better is that I love it too!
All you’ll need to make this is…
- Refrigerated biscuits
- Parmesan cheese
- Garlic and salt
- Italian sausage
- Mozzarella cheese
- Marinara sauce
This eats sort of like a cross between and deep dish pizza and a meatball sub (doesn’t that sound glorious?). Feel free to jazz it up anyway you like!
This is a great way to use up leftovers too. Instead of the Italian sausage meatballs, consider using these leftovers if you have them:
- Meatloaf cut into cubes
- Cocktail (or frozen) meatballs
- Chopped or shredded chicken
- Hamburgers cut into bite-sized pieces
- Sausage or kielbasa

ingredients:
- 1.25 pounds Italian sausage links (I use spicy)
- 1 16-oz 8-pack refrigerated biscuits (such as Pillsbury’s)
- 2 tablespoons parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 24-oz jar marinara sauce
- 12-oz mozzarella cheese, shredded and divided
- Fresh basil leaves (optional)

How to cook Garlic Knot Casserole with Sausage Meatballs
- Remove casings from sausage then pinch off and roll pieces to form meatballs (I usually get about 6 meatballs per link). Add sausage meatballs to a large skillet then brown over medium-high heat until cooked through. Set aside.
- Spray a 13x9 baking dish with cooking spray (or grease with a little olive oil).
- Unwrap biscuit dough then cut each biscuit into quarters. Place biscuit pieces in the baking dish then season the dough with garlic powder, salt and parmesan cheese. Toss to coat dough evenly with seasonings and parmesan then arrange in a single layer in the bottom of the baking dish. Sprinkle 1 cup of shredded mozzarella over dough.
- Pour half of the marinara sauce over dough. Arrange sausage meatballs over sauce then top with remaining marinara sauce and remaining mozzarella. Bake at 350 degrees, uncovered, for 35-45 minutes or until cheese is bubbly and starting to brown.
- Serve with fresh basil if desired.
NOTES:
You can also use thawed frozen meatballs instead of the Italian sausage (I just like the sausage better!). Use about 30 meatballs.
