I look forward to this time of year because it’s when I get to make my FAVORITE type of recipes: soups and stews!! Stay tuned for the next newsletter which will have all my favorite chili recipes!Several of these can be made LOW CARB if you’re like me and on the wagon again (seriously, I think I gained like 11 pounds since Thanksgiving). Sub roasted cauliflower for potatoes (just add it at the end of the recipe so it doesn’t overcook). The lentils have so much fiber in them that the net carbs aren’t too bad (plus they’re chocked full of protein).

- OH MY BLOG! Have y’all seen this?? I bet I’ve watched it 20 times! Watch this Italian grandmother try to work her new Google Home. Bless her heart!!
- There might be something wrong with me because this thing has made me HOWL with laughter. And I don’t even fully understand why. My sense of humor tends to run a little off-sides which is the only explanation I have. This was the single solitary thing I asked for for Christmas (didn’t get it by the way). PS… I would never ever never show this to a small child. I think it's hilarious for some weird reason but I'm not a meany.

If you're looking for the bit I had posted here about a parenting article I read, I decided to delete it. While it sparked some thought-provoking, interesting conversations from most, I received some unnecessarily nasty feedback about it and decided it wasn't worth sharing if it meant bringing that kind of negativity into my world.

Recipes (not my own) I came across this week that REALLY caught my eye.Chocolate Hazelnut Cheesecake from Dinner then Dessert
The Angel Baby LOVES Nutella (like, I have to hide it or she’ll just eat it with a spoon) so this recipe really jumped out at me. Plus it is absolutely GORGEOUS and looks like a solid recipe.
Chili Cheese Dog Dip from Wishes and Dishes
This would have been my childhood fantasy because it combines two of my junk food favorites: chili-cheese dogs and pigs-in-a-blanket. LORD HELP ME I think I could eat the entire pan by myself! I think this will be making a debut at my house for the Super Bowl.
Mustard and Beer Braised Pork Ribs from Blackberry Babe
God bless America, this looks good. I love everything about this recipe: slow cooked pork, beer (it is amazing to cook with – don’t knock it until you try it), whole grain mustard and what looks like a perfect blend of seasonings. I will be making this SOON!

It was New Years Day so we ate the usual: black-eyed peas, collard greens and chicken pilau (get recipes here)
TUESDAY
Really Easy Crock Pot Chili
Cornbread
WEDNESDAY
Chicken Quesadillas
Refried beans
“Mexican Salad” (which just means lettuce, tomatoes, avocado, onion, cilantro and sour cream)
THURSDAY
Leftovers from Monday
FRIDAY
Spaghetti
Cucumber and tomatoes tossed with Italian dressing
So, I’m doing the low carb thing which means I have to make adjustments to the above for myself. Here’s what I did/will do different for myself:
MONDAY
It was Ney Years Day so I ate it all and decided to get right Tuesday.
TUESDAY
Really Easy Crock Pot Chili
I used Taco seasoning instead of Chili (has way less carbs) then added more cumin, chili powder and garlic. I scooped out about half of the beans in my bowl and threw them back in the pot. Pintos are high in fiber so the net carbs isn’t terrible but I still limited myself to only eat a little of the beans.
WEDNESDAY
Chicken
“Mexican Salad” (which just means lettuce, tomatoes, avocado, onion, cilantro and sour cream)
I added the chicken I cooked for the quesadillas to my salad and topped everything with cheese.
THURSDAY
I cooked a pot of Hamburger Vegetable Beef Soup (above) on Sunday to eat for lunches during the week so I'll have a bowl of that (I added a head of cabbage to the soup and picked out all the potatoes).
FRIDAY
Spaghetti
Cucumber and tomatoes tossed with Italian dressing
I have my meat sauce over roasted broccoli (also cooked on Sunday) instead of pasta.
