YOU CAN'T MAKE THIS STUFF UP

Things that made me ugly-laugh or otherwise occupied my attention, mind or heart this week.

  • This story about a little girl making friends with an “old person” in the grocery store. UMMPHH. This is such a great reminder that even a small gesture of kindness can significantly impact someone else’s life. I think God puts people in our paths all the time. We just have to open our hearts (and sometimes minds) to see them there.



  • It got cold enough to have a fire Sunday! So we had that thing roaring ALL DAY. And then I realized I hadn’t turned off the A/C so that sucker ran all day long too. Lord, help us. 
  • We watched a pretty good movie this week that I thought I’d share. With all the streaming movie options out there now it can be overwhelming searching for something so when I find something I enjoy I try to pass it along. I have always enjoyed British romantic comedy/dramas (I love all the clever quips and subtle humor) and if you do too, check out About Time ðŸ˜Š
  • Husband cleaned out our closet and expected the Nobel Peace Prize. I told him I'd get right on his nomination as soon as I finished the 47 loads of laundry I do every weekend.

3 INGREDIENT STOVETOP MACARONI & CHEESE by Serious Eats
OK, I’m all about a Southern custard style mac and cheese but we eat the stuff in the blue box sometimes too. It kinda goes with hotdog night at our house. So when I saw this it caught my eye because it’s easy and homemade. Boom. View Recipe 




BUTTERSCOTCH PIE from Saving Room for Dessert
I dearly love butterscotch. It reminds me of butterscotch milkshakes Mama and I would occasionally get at this dive down the road from our hairdresser. We lived waaaay out in the country and had to drive to town to get our hair done and it was always a day I looked forward to! Sitting for a few hours at the JB White Salon with its fancy green wallpaper… Aqua Net in the air… If Mama was getting something done that took a while (this was the late 70’s and 80’s so I’m sure there were some perms along the way), she’d give me a dollar and let me walk to the drugstore next door. Sigh. Anyway, butterscotch makes me feel special like all those afternoons. View Recipe

Man, when this popped up on Pinterest I had a moment where I just froze up because I didn’t want to lose it somehow by making any sudden movements. This has got MANDY written all over it and I will be making this soon! View Recipe

How I keep it real in a world of paid opportunities and what it means for you



I get offers every single day to review products, try stuff, create recipes, promote brands, etc. in exchange for some sort of compensation. I decline most of them. I only consider working with companies if A) I already use and love their product or B) I think it might be something I’d genuinely like but haven’t tried yet. I'm never gonna be Ricky Bobby trying to sell you tampons. Or Big Red 😆(remember that one?)

And sometimes they send me the stuff and I don’t like it. I don’t write a bad review about it, I just quietly decline their offer. I will never EVER tell you I like something if it’s not the God’s honest truth. And I will only make suggestions to you that I would make to my own family and friends. You'll know when one of my recipes has been sponsored by a product because I will say so in the post.

I’m bringing this up because, if you’re like me, your newsfeed and favorite recipe blogs are filling up with disclaimers and hashtags letting you know the drool-inducing recipes you’re looking at were paid for. Don’t worry. Most food bloggers operate the same way I do. If we love the product, it’s a win/win. Most of us do but there are some out there who might need a pimp. You’ve got enough common sense to spot inauthenticity when you see it ðŸ˜‰

It takes money to run a good food blog. We have monthly expenses just like any other business. Most of us aren’t trying to get rich - we do this because we genuinely love to cook and want to share our recipes with the world. But if we can offset our expenses by using our skills to create a recipe with a product we really do like, it sure helps to keep the lights on.

MONDAY
Baked Chili Cheese Dogs
Ants-on-a-log

TUESDAY
Halloween! Like we have for years, we spent the evening among some of our closest friends having supper together then walking the neighborhood so the kids could trick-or-treat. Look at all my babies! Yes, the little Indian and police officer really are that cute.


WEDNESDAY
Chicken Tacos / Taco Salad
Borracho Beans (from my stash in the freezer)
Yellow Rice
I buy one of those soft taco kits then use 1.5-1.75 lbs chicken breasts cut into small pieces (instead of ground beef - adding cumin, garlic, etc. to season the extra meat). Husband and Brutus eat the tacos then Angel Baby and I make taco salads with all the taco fixin’s and the beans.

THURSDAY
Hamburger Vegetable Beef Soup (aka “school soup”)
Peanut butter & honey sandwiches


FRIDAY
Pork Chop & Rice Casserole
Green Beans

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).

And though I may not respond to them all, I do read each and every comment and I LOVE to hear from you guys! Thanks, y’all! - Mandy
