Chicken & Sausage Dirty Rice

A hearty recipe made with bulk sausage, chicken and rice seasoned with classic Cajun flavors and spices.


I love me some dirty rice.  Especially the kind they have at Bojangle’s.  If you don’t have a Bojangle’s Famous Chicken & Biscuits where you live you need to get in the car and drive South until you find one.  Like, right now!

I also love me some Chicken Pilau.

Mama and Daddy were coming over for Sunday Dinner one afternoon and I was trying to figure out how to make my one chicken stretch to feed everybody when I spied a roll of bulk sausage.

And then I started talking to myself again…

Me:  I wonder if I could make a Dirty-Rice-slash-Chicken-Pilau combination?

Me:  Prolly.  But Daddy won’t like it.

Me:  True.  He doesn’t like it when we go screwing around with his favorite foods.

Me:  Yeah, but I don’t want to go to the grocery store.

Me:  Me either.

Me:  Screw it.  It’ll be great.  And he loves rice so he’ll live.

Later…

Me:  We’re having Chicken & Sausage Dirty Rice.  It’s like Chicken Pilau but with bulk sausage instead of smoked sausage plus green stuff.

Daddy:  Hmmph

At supper…

Mama:  This is good, honey.

Husband:  Supper’s good, Buzz.

Angel Baby:  I like it!

Daddy:  Hmmph

Daddy doesn't like change. I thought he and my mama were going to get in a fist-fight when she bought a "better" coffee pot. He might not like change but she doesn't put up with too much lip so sometimes it gets interesting :)

He did like this recipe though and I've been making it ever since!

Depending on where you live, you may call this Cajun Jambalaya (Creole Jambalaya, or "red" jambalaya, has tomatoes, Cajun doesn't), Chicken Bog or Chicken Pilau.

There's no right or wrong answer to what folks call food in their region of the country. In my neck of the woods, traditional dirty rice is made with only bulk pork sausage (no smoked sausage, chicken, etc) and is eaten as a side dish.

Here, Jambalaya has tomatoes. And Chicken Bog or Chicken Pilau has smoked sausage or andouille.

Chicken & Sausage Dirty Rice

A hearty recipe made with bulk sausage, chicken and rice seasoned with classic Cajun flavors and spices.

Ingredients:

  • 3 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 whole chicken
  • 1 pound pork sausage
  • 3/4 cup finely diced celery
  • 1 onion, diced
  • 1/2 cup red or green bell pepper, finely diced
  • 4-5 cloves garlic, minced
  • 3 tablespoons dried parsley or 1/2 cup chopped fresh parsley
  • 2 teaspoons Cajun seasoning (such as Tony Chachere's)
  • 2 cups uncooked long-grain rice

Instructions:

How to cook Chicken & Sausage Dirty Rice

  1. Clean and rinse chicken well and place in a Dutch oven (or large pot with a tight-fitting lid). Add chicken broth, salt, black pepper and red pepper flakes. Bring to a slow simmer over medium heat. Once water begins to boil, reduce heat to medium-low, cover tightly and simmer for 1 hour.
  2. Remove chicken from broth and set aside. Strain broth and measure 4 cups liquid (not rendered fat – the fat will set on top of the broth). Set broth aside.
  3. Sauté sausage, celery, onion and bell pepper until sausage is cooked through. Add garlic and parsley then stir to combine.
  4. Remove skin, bones, etc. from chicken. Cut chicken into bite sized pieces and set aside.
  5. Combine 4 cups reserved broth, chicken pieces, sausage mixture and Cajun seasoning in your Dutch oven. Taste for seasoning then add more salt, etc. if desired (your dish will taste like the broth so make sure it's as salty and seasoned as you'd like). Add rice.
  6. Bring mixture to a boil, cover then reduce heat to medium-low. Cook for 20-25 minutes or until rice is tender, stirring occasionally.
  7. Remove from heat and let sit for 15 minutes or so before serving.

Notes:

Feel free to use chicken pieces instead of a whole chicken but be sure to use bone-in, skin-on pieces to ensure there is enough fat and flavor in the dish.
I typically use Jimmy Dean HOT sausage in dishes like this.
I don't know if this can be made with Minute rice or brown rice because I've never cooked either type of rice.
I don't know how this could be converted to a slow cooker recipe.

  1. You must know this by now, but I just adore you. The only dirty rice around here is by Zatarins. It's good, but you know... it's a box. The only recipe's I could ever find used organ meat, so I skipped 'em. Guess what I will be making this weekened! Your version!!! And... If plans go well, I will be eating at Bojangles on April 22nd. How exciting is that????

  4. We call this Jambalaya...people this is not how we do it in Louisiana...dirty rice=chicken liver-rice made in the broth from the chicken liver geezzzz I thought everyone knew that :)~

  5. I know I may sound crazy BUT if you are not particularly fond of sausage, is there another meat you could substitue? Maybe ground beef? Ground turkey? :)

    1. Absolutely! Use ground beef or turkey. Just season the meat well when you brown it (I'd make sure to add red pepper, garlic, salt and pepper).

  7. This was so very flavorful! We all absolutely loved it! My boyfriend and nephews cleaned it up in one sitting - there were NO leftovers from this huge pot. And the house smelled wonderful! I had men hovering in the kitchen for an hour!

  11. Thank you the new recipe! I really like the type of rice what you advised. I cook it quite often since we bought rice cooker. The device really can cooking delicious rice many different ways. Here you can learn more hints of the rice cooker. If you like rice the device just you need in your kitchen. Hope you enjoy the review!

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
